Ingredients
- 4 pieces thick cut bacon
- 1 small onion, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 can of seasoned black eyed peas (like Glory)
- 1/2 tsp dried thyme
- 1/4 tsp (+) red pepper flakes to taste
- bay leaf
- 2 cups cooked rice
Method
Fry bacon on med high until crisp, remove to paper towel and chop when cool. To bacon drippings add onion, celery and garlic and sauté until soft. Add the black eyed peas undrained, thyme, red pepper flakes, bay leaf and reserved bacon pieces. Turn off heat and cover. Toss with cooked rice and garnish with green onion. Did not need to add salt.
